
Mother’s Day will be here before we know it, and what better way to treat Mom then cooking for her! These recipes are both yummy and easy. I LOVE fruit and on special occasions I love to serve fruit dip as well. Such a great treat! This Cheesy Potato Brunch bake was also tasty, and very easy to make. I know I would love if my husband/kids made me a special brunch!!
CHEESY POTATO BRUNCH BAKE

INGREDIENTS
- 1 16 ounce chub Essential Everyday Mild Pork Sausage thawed
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped onion
- 2 4.5 ounce packages Essential Everyday Julienne Potatoes
- 4 cups warm water
- 1 cup 2% milk
- 8 large eggs
- 1/4 teaspoon Essential Everyday Ground Black Pepper
- 1 cup Essential Everyday Shredded Mild Cheddar Cheese
DIRECTIONS
In large skillet over medium heat, cook and crumble sausage, peppers and onions until sausage is no longer pink; drain. Set aside.
In large mixing bowl, combine warm water, milk, eggs, cheese packets from potatoes and black pepper. Whisk until well combined. Stir in potatoes and sausage.
Transfer to a greased 13×9-inch baking dish. Bake in a preheated 375°F oven 40 minutes. Top with cheese and continue baking 5 minutes or until knife inserted in center comes out clean.

- 4 about 1-3/4 cups seconds Reddi-wip® Original Dairy Whipped Topping
- 2 tablespoons confectioners’ sugar
- 2 cups assorted fresh fruit pieces
