
We LOVE Mexican food in our house, and this Spanish rice is the perfect side for your tacos, fajitas, etc! This Spanish Rice in the crock pot is super easy, and so good. I absolutely love meals I can pop in the crock pot all day and it’s ready when I get home for dinner, especially with life once again becoming busier. I paired this with tacos, and I didn’t use a shell, I just used the rice for a rice bowl, and it was delicious. Give it a try you wont regret it!
SLOW COOKER SPANISH RICE

INGREDIENTS
- 2 tablespoons Essential Everyday Pure Vegetable Oil
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 1 4 ounce can Essential Everyday Diced Green Chiles
- 1 tablespoon chopped garlic
- 1 tablespoon Essential Everyday Chili Powder
- 2 14.5 ounce cans Essential Everyday Fire Roasted Diced Tomatoes With Garlic undrained
- 1 16 ounce jar hot salsa
- 8 cups Essential Everyday Reduced Sodium Chicken Broth
- 4 cups Essential Everyday Long Grain White Rice
DIRECTIONS
In large saucepan, heat oil over medium heat. Add onions, peppers, chiles, garlic and chili powder; sauté until onions are softened (about 3-5 minutes).
Add undrained tomatoes and salsa; salt and pepper to taste. Bring to a boil.
Transfer tomato mixture to a 6-quart or larger slow cooker. Add broth and rice; stir.
Cook on HIGH 6-8 hours or until rice is tender, stirring occasion
