
This Taco pie is SO good!! My kids didn’t even know there were refried beans in it, so a great way to hide the veggies! This recipe is super easy, and a nice change from tacos. I had all the ingredients right in my pantry too. I topped ours with lettuce, tomato, black olives, sour cream, and salsa. However I didn’t add them to the whole thing so in case we had leftovers it didn’t get soggy. Try this ASAP it’s that good!!

INGREDIENTS
- 1 cup crushed Essential Everyday Tortilla Chips
- 1 8 ounce package Essential Everyday Fancy Shredded Taco Blend Cheese divided
- 2 tablespoons Essential Everyday Butter melted
- 1/2 pound lean ground beef
- 1/2 1.25 ounce packet Essential Everyday Taco Seasoning Mix
- 1 cup Essential Everyday Refried Beans
- – shredded lettuce, chopped tomatoes
- – Essential Everyday Sliced Ripe Olives
- – Essential Everyday Sour Cream optional
- – Essential Everyday Medium Thick And Chunky Salsa optional
DIRECTIONS
In medium bowl, combine crushed tortilla chips, ½ cup cheese and butter; press into bottom of a 9-inch pie plate. Bake in a preheated 375°F oven 10 minutes.
Meanwhile, in medium skillet over medium heat, cook and crumble beef until no longer pink; drain. Stir in taco seasoning mix and 1/3 cup water; cook according to package directions.
Place refried beans and ½ cup cheese in a microwave-safe bowl; microwave (HIGH) 2 minutes, stirring occasionally. Spread over pie. Top with beef and remaining cheese. Return to oven; continue baking 10 minutes.
Top with lettuce, tomatoes and black olives. Serve with sour cream and salsa, if desired.
