
It’s Holiday baking time!! This Carmel Corn recipe is a fun, easy, DELICIOUS recipe! It is seriously so good, and such a fun treat to share with friends, family, neighbors, coworkers, the list goes on! I left the peanuts out because we have allergies in our house, but it still tastes great. I made more than one bag because I knew I wanted to put it in fun bags and deliver goodies to friends. Run and grab the ingredients you won’t regret it!
CARAMEL CORN SNACK MIX

INGREDIENTS
- 1 3.5 ounce bag puff corn (about 12 cups)
- 1 12 ounce container Essential Everyday Butter Toffee Peanuts
- 2 cups firmly packed Essential Everyday Light Brown Sugar
- 1 cup Essential Everyday Butter
- 1/2 cup Essential Everyday Light Corn Syrup
- 1 teaspoon Essential Everyday Pure Vanilla Extract
- 1 teaspoon Essential Everyday Ground Cinnamon
- 1 teaspoon Essential Everyday Baking Cocoa
- 1/2 teaspoon Essential Everyday Baking Soda
DIRECTIONS
In large roasting pan, combine puff corn and peanuts; set aside.
In medium saucepan over medium heat, combine sugar, butter and syrup. Bring to a boil, stirring constantly; boil 1 minute, stirring constantly. Remove from heat.
Stir in vanilla, cinnamon, cocoa and baking soda (mixture will foam). Pour over puff corn mixture; toss to coat.
Bake in a preheated 250°F oven 30 minutes, stirring every 10 minutes. Remove from oven and spread on wax paper to cool. Store in an airtight container.
