
Let’s be real, it’s been bone chilling for a lot of days this month already!! So I decided a warm soup recipe is just what we needed. This baked potato soup was REALLY GOOD!! My whole family loved it, and said it needs to go on the make again soon list. It takes a bit longer since you need to cook the potatoes in the oven, and also cook the bacon, but otherwise it’s pretty simple. I paired it with a yummy Cub bakery croissant. Definitely try this recipe. It will warm you up in this deep freeze!
BAKED POTATO SOUP

INGREDIENTS
- 2 large russet baking potatoes cleaned
- 1/2 16 ounce package Essential Everyday Bacon chopped
- 1 cup chopped onion
- 1 32 ounce container Essential Everyday Reduced Sodium Chicken Broth
- 1 3.8 ounce pouch Essential Everyday Roasted Garlic Mashed Potatoes
- 1/4 teaspoon dried thyme leaves
- 1 cup Essential Everyday Half & Half

- 1/2 cup sliced green onion
