
Nothing better in MN in the winter than a hot dish for dinner! This recipe will never get old, potato and beef casserole I like to call it tater tot hot dish! Super easy, and gets your kids their meat, and veggies all in one! It is also a really good leftover for lunch the next day. You can’t beat a nice warm hot dish in the winter.
POTATO & BEEF CASSEROLE

INGREDIENTS
- 1 pound lean ground beef
- 1/2 cup chopped onion
- 2 cups Essential Everyday Frozen Mixed Vegetables
- 1 12 ounce jar Essential Everyday Home Style Beef Gravy
- 1 10.5 ounce can Essential Everyday Cream Of Mushroom Soup
- 1 10.5 ounce can Essential Everyday Cream Of Celery Soup
- 1 32 ounce package Essential Everyday Frozen Potato Rounds
DIRECTIONS
In large skillet over medium heat, cook and crumble beef and onions until no longer pink; remove from heat and drain.
Stir in vegetables, gravy and soups; salt and pepper to taste. Stir in two-thirds of potato rounds.
Transfer to a greased 2½-quart baking dish; top with remaining potato rounds. Bake in a preheated 400°F oven 45-50 minutes or until bubbly and potatoes are golden brown.
