
I know it’s still summer, and we should be using the grill while we can, but not going to lie I am kind over the grill lol! As a true Minnesotan I was craving a hot dish! This chow mein noodle casserole did not disappoint. It reminds me of a recipe my Mom and Grandma made when I was a kid. Super easy, and a great recipe for when you’re busy and just want to pop something in the oven. With two kids in soccer right now, anything I can prepare ahead and have ready is welcomed. If you’re still loving hot dogs and all things on the grill, tuck this one away for fall!

INGREDIENTS
- 1 pound lean ground beef
- 1 cup chopped onion
- 1 cup chopped celery
- 2 1/2 cups Essential Everyday Beef Broth
- 1 10.5 ounce can Essential Everyday Cream Of Mushroom Soup
- 1 cup Essential Everyday Long Grain White Rice
- 2 tablespoons Essential Everyday Less Sodium Soy Sauce
- – Essential Everyday Chow Mein Noodles
DIRECTIONS
In large skillet over medium heat, cook and crumble beef, onions and celery until no longer pink; drain. Transfer to a greased 2-quart baking dish.
Add remaining ingredients; stir to combine.
Bake in a preheated 350°F oven 1 hour or until rice is tender. Top with chow mein noodles and serve.
