
So whenever my family sees cans of black beans, they immediately think the dinner will be bad lol!! However they were surprised with this taco rice skillet recipe, it was AMAZING!! Super simple, and super good. Takes longer to open all the cans than it does to make the actual meal lol! I paired some tortilla chips on the side as well with the cheese and sour cream. Definitely add this to your faves. It went to the top of my list!!
TACO RICE SKILLET

INGREDIENTS
- 1 pound extra lean ground beef or turkey
- 1 cup chopped onion
- 1 14.5 ounce can Essential Everyday Reduced Sodium Chicken Broth
- 1 14.5 ounce can Essential Everyday Diced Tomatoes With Green Chiles undrained
- 1 10.75 ounce can condensed Cheddar cheese soup
- 1 1.25 ounce packet Essential Everyday Taco Seasoning Mix
- 2 cups Essential Everyday Instant White Rice
- 1 15 ounce can Essential Everyday Black Beans rinsed and drained
- 1 4.25 ounce can Essential Everyday Chopped Ripe Olives
- – Essential Everyday Shredded Mild Cheddar Cheese
- – Essential Everyday Sour Cream
DIRECTIONS
In large skillet with high sides over medium heat, cook and crumble beef and onions until no longer pink; drain.
Add chicken broth, undrained tomatoes, soup and taco seasoning. Bring to a boil, stirring frequently.
Stir in rice, beans and black olives. Remove from heat and let stand 5 minutes, stirring occasionally. Top with shredded cheese and serve with sour cream, if desired.
